Red Island Christmas Shortbread
3 cups plain flour
1 ¼ cups fine caster sugar
1 cup Red Island Extra Virgin Olive Oil
- Pre heat oven to 180C
- Beat together sugar and Extra Virgin Olive Oiluntil smooth. Stir in plain flour, before turning onto a floured work surface to knead till smooth. Refrigerate for at least an hour.
- Roll out dough to 1.5 cm thick. Cut into any shape
- Transfer on to a lined baking tray and sprinkle with fine caster sugar.
- Put tray in the fridge for 30 minutes, before transferring to the oven to cook for 15-20 mins.
