Red Island Christmas Shortbread

Ingredients

3 cups plain flour

1 ¼ cups fine caster sugar

1 cup Red Island Extra Virgin Olive Oil


Method

  1. Pre heat oven to 180C
  2. Beat together sugar and Extra Virgin Olive Oiluntil smooth. Stir in plain flour, before turning onto a floured work surface to knead till smooth. Refrigerate for at least an hour.
  3. Roll out dough to 1.5 cm thick. Cut into any shape
  4. Transfer on to a lined baking tray and sprinkle with fine caster sugar.
  5. Put tray in the fridge for 30 minutes, before transferring to the oven to cook for 15-20 mins.
