Add Red Island Extra Virgin Olive Oil, tomato purée, chilli, garlic cloves and smoked paprika to a food processor and blitz until smooth.
Pour the marinade over the chicken marylands and mix with your hands, until thoroughly covered.
Scatter the potatoes, red onion, capsicum and garlic cloves on a large, lined baking tray and drizzle with Red Island Extra Virgin Olive Oil and season with salt & pepper.
Arrange the marinated chicken marylands on top of the vegetables.
Place the tomato vines between the chicken, scatter the thyme and drizzle with a more Red Island.
Roast in the oven for 1 hour, or until chicken is cooked and juices run clear.
Serve the chicken along with the roast veggies, spooning over a generous amount of the tomato infused Red Island Extra Virgin Olive Oil left over in the baking tray.
