
Healthy Summer Granola
Ingredients:
2 and 1.2 cup of rolled oats
½ cup of almonds, whole and sliced
¼ cup of pumpkin seeds
¼ sunflower seeds
2 tablespoons of sesame seeds
1/2 cup of shaved coconut
1 tablespoon of cinnamon
1 teaspoon of vanilla essence
50 g dried apricots, diced
50 g dried peaches, diced
100ml maple syrup
60ml Red Island Extra Virgin Olive Oil
Method:
Step 1. Pre heat oven to 150C and line a large baking tray with baking paper.
Step 2. In a large bowl, combine all the dry ingredients plus the apricots and peaches and mix until well combined.
Step 3. On the stove melt the maple syrup before adding in the EVOO cinnamon and vanilla, pour over the seed and nut mix. Continue to mix until it is all coated well and transfer on to a baking tray.
Step 4. Bake in the oven for 40 minutes, shaking it at the half way point to make sure it’s not sticking to the paper.
Step 5. Remove from oven and allow to completely cool before storing in an airtight container.
Step 6. When ready to eat serve with fresh berries and yoghurt.
