Fluffy Chocolate Pancakes

Ingredients

  • 1 egg
  • 1/2 cup oats 
  • 1/2 cup milk 
  • 3 Tbs cacao powder 
  • 1 banana 
  • 1/2 tsp baking powder 
  • 1/2 tsp baking soda 
  • Red Island Extra Virgin Olive Oil 

Directions

1. Place all ingredients in a blender and process until smooth a frothy. Place a non stick pan on medium heat, drizzle with Red Island Extra Virgin Olive Oil and once hot add 1/2 cup of the mixture. Cook until bubbles appear on the top of the pancake, flip, and cook for a couple of minutes on the other side, until golden. If your pancakes are getting too brown turn down the heat.

2. Repeat with the remaining mixture.

3. Serve with a dollop of natural yoghurt, berries and a drizzle of maple syrup if you’re into that kind of thing.

I started to share the delicious food I create at home with others that might be in need of a little inspiration. I also started it to motivate myself. I think looking after yourself is hugely important and that it really does start with food. I love food. A lot. Maybe too much (not true, there’s no such thing). This means that I love to eat out at the fantastic array of cafes and restaurants Melbourne has to offer… so therefore when I’m cooking for myself I tend to keep it as healthy as I can, because life is all about balance!
