Ham & Corn Fritters


2 tbsp Red Island Extra Virgin Olive Oil
100g ham, chopped
2 spring onions, thinly sliced
125g can corn kernels, drained
1/4 cup self-raising flour
2 tbsp milk
1 egg, lightly beaten
Salt & pepper to taste


1. Place the ham, spring onion, corn, self-raising flour, milk, egg and salt & pepper in a medium bowl and stir until well combined.
2. Heat the Red Island Extra Virgin Olive Oil in a large non-stick frying pan over medium heat. Add four 1/4-cup portions of the egg mixture to the pan and use a spatula to flatten slightly.
3. Cook for 2-3 mins each side or until golden brown and cooked through. Transfer to a plate lined with a paper towel. Set aside to cool slightly.
4. Serve in lunch boxes along with fruit, veggies and other snacks. Enjoy!
