Ingredients:

3 large sweet mangos sliced

1/2 cup brown sugar

pinch of nutmeg

1 teaspoons of grated fresh ginger

1 teaspoon Red Island Extra Virgin Olive Oil

Crumble

1 cup brown sugar

3/4 cup flour

½ cup Red Island EVOO

3/4 cups rolled oats

1/2 teaspoons cinnamon

pinch of salt

Method:

Step 1: Preheat oven to 180C

Step 2: In a large saucepan, add 1 teaspoon of Red Island EVOO followed by the mango slices, brown sugar, nutmeg and ginger. Cook on a low heat for around 5 minutes, stirring to ensure it doesn’t burn. Set aside to cool.

Step 3: To make the crumble, combine ¾ cup of flour and ½ cup of Red Island EVOO in a mixing bowl, and between fingers until it forms a breadcrumb light consistency. Add in remaining crumble ingredients and mix until well combined.

Step 4: Spoon the mango mixture into a lightly oiled oven proof dish and sprinkle over the crumble mixture, bake for 30 minutes, until the top is golden brown.

Step 5: Serve with vanilla ice cream and fresh mango.
