The quicker the oil is cold pressed after being picked from the tree, the fresher the oil, the higher the quality and the healthier it is. Australian Extra Virgin Olive Oil is fresher than imported oil as it typically reaches retail shelves shortly after being produced.
Yes! Despite the rumours surrounding smoke point and extra virgin olive oil, EVOO is perfect for all cooking applications including shallow and deep frying. The antioxidants and monounsaturated fats ensures that EVOO holds it’s stability even when heated which makes it one of the healthiest oils to cook with. Research also suggests that smoke point is not an accurate indicator of an oils stability when heated.
Extra Virgin Olive Oil should be stored in a cool dark place away from light and heat (such as the pantry or cupboard). If unopened and stored under these conditions, EVOO can last 12-24 months from it’s harvest date. Once opened, it’s best to consume within 3 months as once it is exposed to air, the oil’s antioxidants and flavour profile may start to degrade. Therefore it is best to shop the bottle size that allows you to consume within this time frame.
Extra Virgin Olive Oil is 100% just the juice of an olive. Olives are picked by harvesters into a waiting truck. The truck then transports the olives to the mill where the olives are sorted and crushed into a paste. The paste is then stirred to release the oil sacks within the olive which gives EVOO it’s incredible flavour, before being spun to extract the water, oil and pomace. The EVOO is then stored and packed at our bottling facility, before heading to supermarket shelves around Australia.
Extra Virgin Olive Oil is the highest grade of olive oil and nothing but the juice of fresh olives. EVOO is full of flavour, and contains monounsaturated fats and antioxidants. Anything that is labelled as Olive Oil including “light” and “pure” olive oil contains an amount of refined oil blended with EVOO. The process of refining olive oil uses heat and chemicals and can include degumming, bleaching, deodorising and neautralisation, all of these steps change the fat profile and reduces the antioxidant level making it a less healthy choice.
Extra virgin olive oil contains a wide range of well researched health benefits. This is not only due to the healthy monounsaturated fats in extra virgin olive oil, but also antioxidants and plant compounds it contains. Cooking in Extra Virgin Olive Oil helps absorb fat soluble nutrients and makes food taste better. Find out more about the health benefits of EVOO here https://olivewellnessinstitute.org/
